Known for her bold flavors, modern twists on traditional dishes, and magnetic personality, Silvia brings her deep culinary expertise and vibrant spirit to every experience. She is the executive chef and owner of Briscola and LaRina Pastificio e Vino, two beloved restaurants in Brooklyn that showcase her passion for handmade pasta and regional Italian cuisine. This immersive tour is designed for food lovers who want more than a vacation—it’s a hands-on journey into the heart of Calabria’s food culture, guided by one of Italy’s most dynamic chefs. 

Your home for the week is Hang Loose Cottage, an eco-conscious retreat in the seaside town of Gizzeria, offering a perfect blend of comfort, sustainability, and natural beauty. Nestled among fragrant pine trees with panoramic views of the Tyrrhenian Sea, the resort features cozy cottages, a zero-kilometer organic garden, and direct beach access. Each day includes interactive cooking sessions with Silvia, fresh local ingredients, and time to unwind in a serene setting. Whether you're mastering the art of handmade pasta or enjoying relaxed dinners infused with Calabrian flavors, this unforgettable experience blends world-class culinary instruction, local tradition, and warm hospitality into one extraordinary escape.

ITINERARY

DAY 1
Arrival & Welcome Dinner

Arrive at Hang Loose Cottage, your serene eco-retreat nestled along the Tyrrhenian coastline. Take the afternoon to settle into your private cottage, breathe in the sea air, and get acquainted with your fellow travelers amid the tranquil pine groves. As the sun sets, gather for a special Welcome Dinner hosted by Chef Silvia Barban. Enjoy a thoughtfully curated seasonal tasting menu that highlights the flavors of Calabria—your first introduction to the region’s vibrant culinary identity.

DAY 2
Cheese & Beer

After a leisurely breakfast, we’ll venture into the Calabrian countryside to visit a traditional cheese producer, where you’ll learn the time-honored methods behind crafting local favorites like pecorino and caciocavallo. Enjoy a tasting paired with rustic bread and seasonal accompaniments. In the afternoon, dive into Calabria’s emerging craft beer scene with a guided tour and tasting at a local microbrewery, exploring unique brews inspired by regional ingredients. Lunch and dinner are included, showcasing local specialties.  

DAY 3
'Nduja Workshop & Cooking With Silvia 

This morning is dedicated to ’nduja, Calabria’s famous spicy, spreadable salami. Learn how it’s made and how to incorporate it into traditional and modern dishes during an interactive workshop. Later, accompany Chef Silvia to a local farmers’ market, where you’ll hand-pick fresh, seasonal ingredients for the evening’s cooking session. Return to the cottage for a hands-on culinary class, culminating in a communal dinner featuring the dishes you’ve prepared together.

DAY 4
Olive Oil & Wine Tasting 

Today, you’ll explore two of Calabria’s most prized artisanal products. Begin with a visit to a family-run olive oil estate, where you’ll tour the groves and press room before sampling their premium extra virgin oils. Then continue to a boutique winery, learning about native grape varietals and sustainable practices, followed by a curated tasting. Enjoy a relaxed afternoon with optional beach time or a spa treatment on site. Lunch is provided; the evening is yours to dine independently and explore the local culinary scene.  

DAY 5
Fishing & Feast

Rise early for a morning at sea with a local fisherman, gaining insight into traditional fishing techniques that have sustained coastal communities for generations. Upon return, join Silvia in preparing the day’s fresh catch during a rustic seaside cooking session, followed by a long, leisurely lunch by the water. The evening is free for you to enjoy at your own pace—perhaps with a sunset stroll or aperitivo by the beach.  

DAY 6
Tropea & Pizzo Excursion 

Embark on a full-day excursion to Tropea, one of Calabria’s most picturesque towns. Take a guided walking tour through its historic center and enjoy time to explore its charming streets, artisanal boutiques, and dramatic seaside cliffs. In the afternoon, continue to Pizzo, renowned for its rich history and as the birthplace of Tartufo gelato. Visit its quaint piazzas and sample this iconic dessert. The day concludes with a group dinner in Pizzo, featuring local seafood and traditional Calabrian fare.

DAY 7
Free Day & Cooking Farewell 

Savor a slow morning with time to relax, take a beach walk, book an optional massage, or shop for local crafts and delicacies. In the afternoon, reconvene for a final cooking session with Chef Silvia, where you’ll prepare a celebratory menu that reflects everything you've learned. Our Farewell Dinner will feature multiple courses, expertly paired with regional wines—a fitting toast to a week of culinary discovery and shared memories.

DAY 8
Departure 

Enjoy a final breakfast overlooking the sea, followed by check-out and fond farewells. You’ll leave not only with new cooking skills and recipes, but with a deeper appreciation for Calabrian culture, cuisine, and connection.  Private transfers to the airport upon request.

  1. What forms of payment do you accept?
    Cash, Credit Card, Check, PayPal.
  2. What is your cancellation policy?
    $500 non refundable deposit. (Unless noted below) 

    Payment in full is required at 30 days prior to departure REFUNDS / In the event that we must cancel a trip, you will be given a full refund of all deposits and payments.

    We do not give refunds of deposits or final payments for tours that commence as scheduled, including for unused portions of the tour. We do give credit for cancellations as noted below. 

    Cancellation policy: In the event you cancel your tour for any reason, we allow credit for payments (but not the non-refundable deposit) in the following way: 
    - 100% credit for future tours given with 90 days notice. 
    - No credit given for cancellation less than 30 days prior to start date of the tour. 

    The airport in Calabira is Called: Lamezia Terme (SUF) 

    We must reach a minimum of 12 People to have this tour. 

    If this number is not reeached we will return all monies.
  3. What document are required to travel to Italy?
    Passport (not to expire within 6months of leaving the USA), proof of vaccination.
  4. Can you accommodate gluten-free travelers on your tour?
